Yours portly is worn out after the second week of school, so I’m keeping it quick today: I’m sharing a video of some baked potatoes—and the recipe for making them yourself.
I found a super-easy recipe for baked potatoes. Here’s the quick version, and it does not require aluminum foil:
Ingredients: russet potatoes, cooking spray, seasonings (optional)
Prep and cooking time: ~65-75 minutes
- Preheat oven to 400 degrees Fahrenheit
- Wash and dry potatoes
- Poke holes into the potatoes with a fork (I liberally peppered the spuds with holes)
- Spray a pan with cooking oil
- Roll the potatoes around in the oil
- My addition: season the oiled spuds with pepper, onion powder, garlic powder, oregano, etc.—whatever you like!
- Bake in over for one hour
- Remove and let cool slightly—but serve hot!
I found that this easy recipe made potatoes that had a nice skin and fluffy, flavorful insides. I didn’t even use butter and sour cream, and one of these potatoes eaten plain was delicious.
So, naturally, I made a video gawking at my lovely spuds:

I should have cut into them. But I’m drooling looking at these spuds again!
Happy Friday!
